As thousands are expected to gather in downtown Raleigh for the Carolina Hurricanes' Stanley Cup celebration, food truck owner Marcus Jenkins, of Spud Kings, is preparing for what he calls the biggest event he's ever been a part of.
The parade is set to travel along Hillsborough Street to Fayetteville Street, culminating in a rally at City Plaza. Jenkins, selected as one of about 30 food trucks stationed near Davie Street, has stocked up heavily, including 600 pounds of potatoes, to serve what he anticipates will be thousands of fans.
He estimates that this busy weekend, which coincides with Juneteenth celebrations and a food truck rodeo, could account for about 10 percent of his annual business. Jenkins expressed excitement not just for the potential revenue, but for the significance of the event, recalling the Hurricanes' last championship run two decades ago.
He looks forward to celebrating with the community, saying, 'If they bring over the Cup, we'll load it with fries.' City officials expect the parade to be the largest in Raleigh's history, highlighting both the team's success and the economic benefits for local businesses, as reported by ABC11.
